This mole is absolutely scrumptious! Made in the state of Veracruz in Mexico, Mole Xiqueño has a great balance between heat and sweetness. The paste is smooth in texture with a lightly sweet almondy taste. It is made with Ancho and Mulato chilies, bread, sesame seeds, almonds, peanuts, garlic, spices, piloncillo (raw sugar cane) and a little salt. It is fully vegetarian.
This is quite a concentrated paste, a little goes a long way, a jar is good for about 8 portions of mole, so don't be put off by the price. It makes a lot of mole! To make the mole, put half of the jar or 250 grams of the mole paste in the blender or food processor, add about 20 grams of stale bread, or a corn tortilla broken into pieces and about 250 mls of chicken or vegetable stock and a pinch of salt and ground pepper. liquidize until you obtain a uniform sauce. Heat a tablespoon of vegetable oil in a pan, pour the mole sauce from the blender and cook for a 8 to 10 minutes to thicken the sauce. You can add extra chicken stock to adjust thickness. Serve with Chicken and Rice or with your favourite veggies.
