This salsa combines two of my favourite ingredients: tamarind and De Arbol Chillies. It is sweet with a good hint of cumin flavour and slightly spicy, perfect to glaze your favourite fish or some chicken wings. I love it on whole cauliflower for roasting too. Cocina Mestiza got the right balance between the tartiness of tamarind and the spice and citrus from the chilies. This is on the sweet side, so best use for glazing and if you want to add extra heat, crush some chipotles in adobo through it.
