This delicious Poblano Mole Paste is one of our favourite products. We both love mole a lot. Alan could eat it every day. It's amazingly rich Moorish flavour is both complex and full of layers of flavour that will set your taste buds on a party.
Mole (pronouced as Mo-lai, as in the soccer song ole, ole, ole, ole), is a Mexican sauce, dark-red in colour and made from dried chilies, spices, seeds and chocolate. It is the Mexican answer to curry and it is a super traditional and delicious dish in Mexico, eaten all over the country. It's rich, sexy, quite aromatic.
The most popular moles are those made in the regions of Puebla and Oaxaca in Mexico and traditionally they would have been a celebratory dish served at weddings, funerals, Christmas, etc.
Mole is absolutely delicious. Don't be put off by the notion that it has chocolate, this is an awesome savoury dish worth of all the love you can give it! Served with chicken, turkey or even pork, it is a fabulous way of getting rid of leftover meats!
