Ok, I really, really, really love this product. Blue corn is such a gorgeous variety and we are pretty impressed with the quality that Maza Real is bringing to the market. Made with nixtamalised, GMO free Mexican blue corn, the colour of this flour is a greyish blue, but when you add water it darkens slightly and then darkens again when you cook it. We love it! It has a gorgeous flavour, perfect for tortillas, gorditas, sopes and any other Mexican dishes.
