Smokey, spicy with a hint of sweetness, this Oaxacan style black mole has everything! I absolutely love it! Made to the traditions of Oaxaca by Cocina Mestiza in Mexico City, the powder is quite consentrated and rich. To prepare it, all you need to do is put half your mole powder into your blender or food processor (the whole pack serves about 12 to 15 servings) add half a litre of your prefer stock - we love chicken, turkey or duck - and blend until you have a homogenous sauce. Transfer to a saucepan at medium heat and cook stirring regularly until you reach the desired consistency for your sauce.
