This masa-harina is made with yellow corn, as suppose to the usual white corn we normally stock. Yellow corn is slightly earthier in flavour than white one but it is also rougher in texture, hence the tortillas made with yellow corn are best for very juicy fillings as they're more robust than white ones. It comes in 1 kilo bags and it is Gluten Free, made with 100% natural corn, although sadly, it does contain GMOs. The flour is also good for baking and as a thickening agent for those with Coeliac or wheat intolerance. Treat it exactly the same as you do your white or blue corn masa-harina.
